Things to know about dialing in the Sette 270.

Very loud operation. The Sette 270 is one of the loudest home espresso grinders due to its high-speed DC motor and plastic housing, which does not absorb sound like metal-cased grinders. Expect noticeable noise during grinding.

Gearbox durability concern. Earlier revisions had a known issue with the plastic gearbox failing after 12-18 months of regular use (2-3 shots daily). Baratza has improved this over time and provides excellent warranty support, but it remains the primary mechanical weak point.

Shim-dependent espresso range. Settings are not comparable between units because the number of installed shims drastically shifts the usable espresso range. With 0 shims a new grinder may need macro 8-12; with 1 shim typical range is 2-6; with 2 shims 6-10. Always report your shim count when sharing settings.

Macro-micro overlap by design. Each macro step contains a few micro settings that overlap with adjacent macro steps (approximately 3 micro positions of overlap). Setting 2A is actually finer than 1I. This eliminates gaps between macro steps but can be confusing when comparing settings.

Exceptionally low grind retention (under 0.5g). The straight-through vertical grind path means coffee passes directly from hopper through burrs into the portafilter with minimal retention. Excellent for single-dosing workflows.

Static buildup in dry conditions. The plastic construction can cause static electricity, leading to grounds clinging to surfaces during dry winter months. Using the Ross Droplet Technique (RDT) - adding a single drop of water to beans before grinding - effectively mitigates this.

Micro ring can slip during grinding if the felt friction pad wears. If the micro adjustment drifts during operation, a replacement felt shim can be installed in the adjustment assembly to restore friction.

Vibration on the 270Wi model can cause the portafilter to shift in the holder and the integrated scale to misread. Baratza addressed this with softer dampening feet in later revisions, and the Acaia-sourced scale improved accuracy.

Zero Point

Factory-calibrated with shim system. No user-adjustable zero point in the traditional sense. The grinder ships with shims included. After the first few pounds of coffee season the burrs, the lowest macro setting may no longer be fine enough for espresso. Install one 0.3mm shim below the cone burr to shift the entire grind range finer. Up to 3 shims can be stacked. Each shim shifts the effective espresso range by roughly 4-6 macro steps.

Burr seasoning causes the effective grind range to drift coarser over the first few pounds of coffee. Users commonly start espresso around macro 8-12 with a new grinder and migrate down to 3-7 after months of use. Shims are the primary recalibration mechanism. The macro ring detent (stepped click) provides excellent same-unit repeatability, but unit-to-unit settings are not comparable due to different shim configurations and burr wear states.
